If you could choose, where would you be right not? In this cold, rainy Scottish day I’d rather be sitting on Santa Monica Pier with a chilli dog in the spring sunshine. Tasty street food, great view, different culture, warm weather and anonymity, just sitting on a bench with a seagull, not knowing the time.

Pumpkin Pepper
A pumpkin like a mini pepper, it’s the small things that make me smile as I make our packed lunches for our new healthy regime, mix with prawns, avocado, lettuce, pine nuts and a mix of mayo and ketchup – it’s kind of healthy.

From my Diary: Lists, Kitchen and Food

We go with our list, we're so lucky we don't need to worry, find what we want throw it in the basket, couldn't tell you the cost of most items. But all around us it's different, people hear redundancy, offices close and the lights remain off. What is our back up, where is our plan. The onus is always on me, take stock, be sure, be prepared, be organised.
A tidy kitchen, it's a small step but it makes me want to cook more, to create something and to tidy up afterwards. I can't stand eating alone, I'll eat junk, thankfully I don't eat alone too often.
People talk about Eat, Love, Pray, the favourite part often being sitting and eating your the best foods on your own, I 'd rather share food with those I love. I enjoy eating along in a restaurant but not in a room with nobody else. I don't want to over analyse things we all have our likes and dislikes.
Baking is a Joy
Thanks to Joy the Baker, I was inspired to create a pudding this week.
It’s tasty and it’s reasonable healthy.
Cut apricots in half and dip them in sugar
Grill them
Caramelise them if you wish
Top with Greek style yogurt and eat
I don’t think I’d get away with calling this baking unless I was inspired by Joy the Baker, she makes me want to bake and to eat every single day.
This week I’m a Zombie
This week has been a bit of a blur to me, it really feels like it’s Friday, I have to admit. I was in the USA the week before last and for some reason it’s taking me forever to get over it!
I don’t normally have any problems with jet lag and manage to snap into a new time zone within a day, my rule is never sleep unless it’s dark. When I got back last week though I took the next day off and slept in until 1pm, since then I’ve been feeling like a zombie – and it’s been an entire week.
I know the best way to get over it - to sleep at the right time, drink plenty of fluids, eat healthily, exercise etc. etc. but all I want to do is lounge on the sofa with a cup of tea and a chocolate biscuit!
The trip to the US was so enjoyable though, mainly due to the amount of food (I did not eat all those donuts – promise!) and margaritas involved, but I thrive on the change of scenery and I get excited about things like a trip to Target or seeing cowboy boots.
I posted recently about how I become an alternative version of myself when in Texas and it’s kind of true. I think that’s why I find a trip so refreshing it allows me to enter into an alternative life, I can imagine what it would be like to live there.
Still at the end of a couple of flights it’s so good to be home, even if I’m a zombie still on US time and still dreaming of Reese’s Peanut Butter Cups.
